The Story
From a single farm in El Gobiado, sun-dried for weeks on raised beds until the cherries fermented into something almost wine-like. The result is loud, unrepentant, and dripping with sweetness.
Red Bourbon and Pacas grow side by side here, and the lower altitude — 1,350 meters — gives the cup its weight. Heavy caramel. Belgian chocolate. A long, sticky finish.
This is the coffee for mornings that need an opinion. Pull it as espresso for syrup and dark fruit, or brew it as filter to watch the honey come forward.
