The Highland.

Nyakibanda sits high — 2,200 meters — and the altitude shows up in the cup as structure. Bourbon variety, dried naturally, with the cherries on the bean long enough to develop dried-fruit sweetness.

Orange peel, raisin, black tea. It pulls cleanly as espresso, rounds out beautifully with milk, and shows off the most clarity on V60.
