Pink Bourbon is a mutation — a natural cross of Red and Yellow Bourbon discovered in Huila, Colombia. The cherries ripen to a soft rose color and produce a cup unlike anything else on the menu.
This lot from Pitalito is washed with surgical precision to preserve its hallmark: a perfume of delicate florals layered over deep oak and a clean, almost crystalline chocolate finish.
It is the kind of coffee that converts skeptics. Pull it as espresso for the florals, brew it on V60 for the structure, or use Aeropress to wrap the whole thing in silk.
